Creamy Lemon Garlic Chicken

Ingredients

  • 500 g chicken (boneless, skinless chicken breast)

  • salt

  • pepper

  • 1/2 cup flour

  • 2 Tbsp butter

  • 2 minced garlic

  • 200 ml heavy cream

  • 250 ml chicken stock

  • 2 lemon

  • 2 Tbsp chopped fresh parsley

Steps

  • Season chicken breasts both sides with salt and pepper. Coat the chicken in flour and shake off any excess.


  • Heat a large pan on medium heat. Add the butter and allow to melt. Add chicken breasts into the pan and cook 3-5 minutes each side or until golden brown. Remove the chicken from pan and set aside.
  • Add minced garlic into the same pan, cook for 20 seconds or until fragrant. Pour the chicken stock and scrape any brown bits off the bottom of the pan into the sauce.
  • Pour the heavy cream and let it simmer for 3 minutes until slightly thickened. Squeeze one fresh lemon into the sauce. Season with salt and pepper, stir well.
  • Return chicken to the pan and top with sliced of one lemon. Coat the chicken with the sauce and sprinkle with chopped fresh parsley.
  • Serve with some pasta or simply with some roasted broccoli.
