Mother’s Day – Surprise Mom with Breakfast in Bed
Can you believe we are already into the second week of May? It means Mother’s Day is just around the corner, and we are looking for a beautiful gift for our beautiful Mom. Whether you get her a gift or not, it’s always nice to celebrate the entire day with her in mind.
Mama was my greatest teacher, a teacher of compassion, love and fearlessness. If love is sweet as a flower, then my mother is that sweet flower of love.

I believe that everyone wants Mom to feel special, so here I am sharing with you a simple way to show your Mom how special she is! Yes, it’s time to give Mom a break in the kitchen by pampering her with this easy breakfast in bed idea. Breakfast in bed is a lovely way to show her how much you appreciate all she does for you.
Individually, these recipes are simple enough to make any day, but bring them both together and you’ll have yourself nothing short of a feast!
Baked Avocado Egg Boats
Simple, quick and delicious, baked avocado egg boat seems so fancy but it takes only 30 minutes to make. These avocados are filled with eggs then baked until the yolk reaches desired consistency and have bacon bits on top. I think this an awesome way to kick off a Mother’s Day celebration.

Mini Pancake Skewers
Just sweet enough without being cloying this mini pancake skewers have an eye-catching look with all those fruit slices and for sure, they will get Mom’s attention!
You can use any fruits combinations and different filling, but I just keep it simple with a goodness spread of Nutella and strawberry slices will make these pancakes even more delicious. Aren’t they adorable with those little note on the top of the toothpick ?
Note: You can either serve fresh or make ahead and keep in the fridge over night. These pancakes can be served warm or cold.

Fruit Kabobs
For as good as it looks and tastes, these fruit kabobs could not be simpler. All you do is cut up your Mom’s favorite fruits and insert those fruit slices onto each skewer. I like to put a rainbow of fruit on these skewers, so in this case I used strawberries, grapes, watermelon, honeydew and cantaloupe.
Note: If you want to get fancy, use a small cookie cutter to cut firm fruit into heart or flower shape.
Don’t forget the drinks. I believe a cup of coffee or tea is a must for a breakfast, and maybe an extra glass of orange juice won’t hurt.
Take your tray to the next level by adding a touch of simple flowers or greenery in a small vase. For extra points, I tied the cutlery and napkin together with a rope, then inserted little flowers in the middle. I also lit a tealight to give a warm and cozy atmosphere.
