1 onion
1 liter vegetables stock
1 bay leaf
2 Tbsp parsley
1 tsp dried marjoram
nutmeg
salt
ground black pepper
2 Tbsp olive oil
3 wiener sausages
2 garlic bread

Potato soup

is very tasty and easy to make. You may find many recipe of this soup, but this time i want to share how to make the classic German potato soup. It always great for any season, but it will be perfect for cold-weather. The idea of this recipe was coming from one of my German friend. She made this soup last Christmas, and i really loved it! I make this soup very often, it doesn’t take so much time and just perfect dish before i serve the main course.

Note: You can also substitute the wiener sausages with bacon.

vegetables preparation

Peel the potatoes and carrots. Cut them into cubes.
Chop the onion, scallion and parsley.

Heat the oil in a large pot over medium heat. Add the onion and stir until it turns translucent.
Add the scallion, potatoes, carrots, vegetables stock and bay leaves in to the pot; cover and simmer for 10 minutes or until the potatoes are tender.

Remove the bay leaves from the pot.
Add the parsley and marjoram.

Set your machine to puree or grind and begin to mash the vegetables.
Once you vegetables pureed, season with salt, pepper and nutmeg to taste.

Slice the wiener sausages and transfer to the pot.
Serve immediately with some garlic bread.
