Whatever the season, this German potato soup recipe is always worth to try.

Zutaten

  • 5 big potatoes

  • 2 carrots

  • 1 scallion

  • 1 onion

  • 1 liter vegetables stock

  • 1 bay leaf

  • 2 Tbsp parsley

  • 1 tsp dried marjoram

  • nutmeg

  • salt

  • ground black pepper

  • 2 Tbsp olive oil

  • 3 wiener sausages

  • 2 garlic bread

Anweisungen

  • vegetables preparation: Peel the potatoes and carrots. Cut them into cubes. Chop the onion, scallion and parsley.
  • Heat the oil in a large pot over medium heat. Add the onion and stir until it turns translucent. Add the scallion, potatoes, carrots, vegetables stock and bay leaves in to the pot; cover and simmer for 10 minutes or until the potatoes are tender.
  • Remove the bay leaves from the pot. Add the parsley and marjoram.
  • Set your machine to puree or grind and begin to mash the vegetables. Once you vegetables pureed, season with salt, pepper and nutmeg to taste.
  • Slice the wiener sausages and transfer to the pot. Serve immediately with some garlic bread.
