Classic Bruschetta

Ingredients
350 g tomatoes
1 Tbsp onion (finely chopped)
1 clove small garlic (crushed)
fresh basil (chopped)
1 tsp dried oregano
2-3 Tbsp extra virgin olive oil
a pinch of salt
a pinch of pepper
1 fresh baguette
Steps
- Dice the tomatoes and place into a bowl.
Add the chopped onion, crushed garlic, some fresh chopped basil, oregano, olive oil, sal and pepper to taste.
Toss to combine. Let marinate for 30 minutes.

- Preheat a grill pan.
Slice the baguette around 1 to 1,5cm thick on the bias.
Grill on the pan until crispy and golden brown.
then rub tops of bread with halved garlic cloves.

- Place grilled bread on a serving plate. Spoon tomatoes mixture on top of bread just before serving.
You can top each bread with a basil leaf.
