an antipasto (starter dish) from Italy.

Ingredients

  • 350 g tomatoes

  • 1 Tbsp onion (finely chopped)

  • 1 clove small garlic (crushed)

  • fresh basil (chopped)

  • 1 tsp dried oregano

  • 2-3 Tbsp extra virgin olive oil

  • a pinch of salt

  • a pinch of pepper

  • 1 fresh baguette

Steps

  • Dice the tomatoes and place into a bowl. Add the chopped onion, crushed garlic, some fresh chopped basil, oregano, olive oil, sal and pepper to taste. Toss to combine. Let marinate for 30 minutes.
  • Preheat a grill pan. Slice the baguette around 1 to 1,5cm thick on the bias. Grill on the pan until crispy and golden brown. then rub tops of bread with halved garlic cloves.
  • Place grilled bread on a serving plate. Spoon tomatoes mixture on top of bread just before serving. You can top each bread with a basil leaf.
