Homemade Mushroom Tomato Pizza

250g all purpose flour
500g all purpose flour
1 tsp salt
1 tsp sugar
7 g dry yeast
250ml lukewarm water
2 Tbsp olive oil
1 Tbsp breadcrumbs
250 g fresh mozzarella
1 clove garlic
1 Tbsp olive oil
250 g fresh mozzarella
100 g cremini mushrooms
125 g cherry tomatoes
Steps
- Add the yeast to lukewarm water and stir to make sure its all dissolved; set aside for about 5 minutes.


- In the bowl of a standing mixer, fitted with a dough attachment, mix together the flour, salt, sugar and olive oil.
Stir the yeast in the flour mixture.
Knead until every this is combined for about 10 minutes on low speed.

- Sprinkle a baking tray with breadcrumbs. Divide the dough in two pieces and roll into a ball. Place the pizza dough into a baking tray, sprinkle with some flour on top, then cover with a slightly damp cloth and leave to rise for at least 2 hours in a warm place.
- Garlic oil – topping: In a small bowl, press the garlic using a garlic press.
Add a tablespoon of olive oil and mix them well; Set aside.

- Preheat the oven to 225°C and place a pizza stone in the oven and preheat it for 15 minutes. (if you don’t have a pizza stone you can use a large baking sheet).
Sprinkle some flour onto your counter, take a ball of dough and dredge it in the flour on all sides.
Using your hands or a rolling pin, roll the dough out around 20 cm diameter.

- Using a pizza peel, place the rolled out pizza dough on it.
Brush the garlic oil all over the top of the dough, place the fresh mozzarella, cherry tomatoes, sliced cremini mushrooms evenly all over the dough. Bake for about 15-20 minutes.
