Quinoa with Tofu and Vegetables

150 g organic tricolor quinoa
300 g tofu
150 g ripe tomatoes (various colours)
300 g zucchini
1 red onion
1 clove garlic
25 g sesame seeds
2 Tbsp olive oil
salt
pepper
2 Tbsp chopped parsley
Steps
- Cook the organic quinoa according to package instructions.
Add sesame seeds into a pan (do not add oil). Heat over medium-low heat. Stirring occasionally for about 2-3 minutes, until the seeds turn brown and glisten.

- Slice the zucchini with spiral slicer (you can just slice it thinly, if you don’t have a spiral slicer)
Peel and slice the red onion and garlic.
Cut the tomatoes in half.


- Dice the tofu and sauté them in a large pan with olive oil until golden brown.
Add the onion, garlic and zucchini. Stir and cook until the onion turns translucent for about 5 minutes.
Add tomatoes, then season with salt and pepper.


- Add the cooked Quinoa into the pan and mix it well.
Sprinkle with chopped parsley and sesame seeds.
