Indonesian stir fry tofu – Oseng tahu

Ingredients

  • 500 g tofu

  • 10 g garlic

  • 50 g shallot

  • 5 fresh chilis

  • 2 bay leaf

  • 5 g fresh galangal

  • 10 g palm sugar (1 Tbsp)

  • 2 Tbsp sweet soy sauce

  • 150 ml water

  • salt

  • 400 ml vegetable oil

Steps

  • Cut the tofu into matchsticks. Heat vegetables oil in a large skillet over high heat. Fry tofu until golden brown, set aside.

  • Slice thinly the garlic, shallot, chilis. Sauté the garlic, shallot, chili, bayleaf and galangal for 3 minutes with 2 Tbsp vegetables oil.

  • Add the water, palm sugar, sweet soy sauce and season with salt. Stir and cook until the palm sugar caramelized.
  • Add the fried tofu and let the tofu absorb all the sauce. Serve immediately with jasmine rice.
