Indonesian stir fry tofu – Oseng tahu

500 g tofu
10 g garlic
50 g shallot
5 fresh chilis
2 bay leaf
5 g fresh galangal
10 g palm sugar (1 Tbsp)
2 Tbsp sweet soy sauce
150 ml water
salt
400 ml vegetable oil
Steps
- Cut the tofu into matchsticks.
Heat vegetables oil in a large skillet over high heat.
Fry tofu until golden brown, set aside.


- Slice thinly the garlic, shallot, chilis.
Sauté the garlic, shallot, chili, bayleaf and galangal for 3 minutes with 2 Tbsp vegetables oil.


- Add the water, palm sugar, sweet soy sauce and season with salt. Stir and cook until the palm sugar caramelized.
- Add the fried tofu and let the tofu absorb all the sauce.
Serve immediately with jasmine rice.
