Ingredients

  • 2 cups cooked white rice ((cold))

  • 8 strips bacon

  • 3 egg

  • 1 onion

  • 3 chilis (optional)

  • 2 Tbsp sweet soy sauce

  • 1 Tbsp soy sauce

  • 1 scallion

  • 1 tsp salt

  • 1/4 tsp ground black pepper

  • 1/4 tsp sugar

  • 1 Tbsp vegetable oil

  • some sliced cucumber

Steps

  • Chop the onion, chilis and scallion then set aside. Beat the eggs and season with salt and pepper. In a large wok, heat the vegetable oil over medium heat, add beaten eggs. Scramble the eggs then set aside.
  • In another non-stick pan, add and fry the bacon until become crisp then set aside. Do not throw the liquid (fat/oil) from the bacon away, Use it for the next step.

  • Pour the liquid (fat/oil) from the bacon into the wok. Put the onion and chilis. Stir and cook until the onion turns translucent for about 5 minutes. Add the scrambled egg.

  • Bring the cooked white rice in the wok and break up any clumps. Add the sweet soy sauce, soy sauce, salt, sugar and pepper. Stir until all well-combined.
  • Add the bacon and the scallion to the pan. Stir for about 1-2 minutes. Don’t overcook otherwise the bacon won’t crisp anymore. Serve immediately with some sliced cucumber to give some fresh taste.
