Bacon fried rice

2 cups cooked white rice ((cold))
8 strips bacon
3 egg
1 onion
3 chilis (optional)
2 Tbsp sweet soy sauce
1 Tbsp soy sauce
1 scallion
1 tsp salt
1/4 tsp ground black pepper
1/4 tsp sugar
1 Tbsp vegetable oil
some sliced cucumber
Steps
- Chop the onion, chilis and scallion then set aside.
Beat the eggs and season with salt and pepper.
In a large wok, heat the vegetable oil over medium heat, add beaten eggs.
Scramble the eggs then set aside.

- In another non-stick pan, add and fry the bacon until become crisp then set aside.
Do not throw the liquid (fat/oil) from the bacon away, Use it for the next step.


- Pour the liquid (fat/oil) from the bacon into the wok. Put the onion and chilis.
Stir and cook until the onion turns translucent for about 5 minutes.
Add the scrambled egg.


- Bring the cooked white rice in the wok and break up any clumps.
Add the sweet soy sauce, soy sauce, salt, sugar and pepper.
Stir until all well-combined.

- Add the bacon and the scallion to the pan. Stir for about 1-2 minutes.
Don’t overcook otherwise the bacon won’t crisp anymore.
Serve immediately with some sliced cucumber to give some fresh taste.
