This Indian chicken curry is absolutely delicious and gives me a wonderful feeling of satisfaction.

Ingredients

  • 1/4 cup vegetable oil

  • 500 g chicken (breast)

  • 1 tsp salt

  • 1 chopped onion

  • 2 cloves minced garlic

  • 5 dried chilis chilis (optional)

  • 1 tsp minced ginger

  • 1 Tbsp tomato paste

  • 1 tsp curry powder

  • 1/2 tsp turmeric

  • 1/2 tsp ground coriander

  • 1/2 tsp cayenne pepper

  • 1/2 tsp ground cumin

  • 1/2 tsp garam masala

  • 250 ml tomato purée

  • 150 ml plain yogurt

  • 75 ml water

  • 1/2 tsp salt

  • 1/4 tsp white pepper

  • 1 tsp sugar

  • 2 Tbsp fresh chopped cilantro

  • 1/4 fresh lemon

Steps

  • Sprinkle the chicken breast both side with a teaspoon salt. Heat the vegetable oil in a big skillet over high heat and put the chicken into it. Cook for about 3-5 minutes each side or until golden brown and set aside.
  • Reduce the heat and still using the same skillet, add the chopped onion and stir until the onion turns translucent. Add minced garlic, chilis, ginger, tomato paste and stir for a couple minutes. Add the curry powder, turmeric, ground coriander, cayenne pepper, cumin and garam masala. Stir for a minute.
  • Pour the tomato purée, yogurt, water. Season with salt, pepper and sugar. Put the chicken breast back to the skillet and cover it with the sauce then bring to a boil.
  • Reduce the heat and simmer for about 20-25 minutes or until the chicken breasts get tender. Sprinkle with fresh chopped cilantro and lemon juice before serve.
