Indian Chicken Curry

minutesThis Indian chicken curry is absolutely delicious and gives me a wonderful feeling of satisfaction.
Ingredients
1/4 cup vegetable oil
500 g chicken (breast)
1 tsp salt
1 chopped onion
2 cloves minced garlic
5 dried chilis chilis (optional)
1 tsp minced ginger
1 Tbsp tomato paste
1 tsp curry powder
1/2 tsp turmeric
1/2 tsp ground coriander
1/2 tsp cayenne pepper
1/2 tsp ground cumin
1/2 tsp garam masala
250 ml tomato purée
150 ml plain yogurt
75 ml water
1/2 tsp salt
1/4 tsp white pepper
1 tsp sugar
2 Tbsp fresh chopped cilantro
1/4 fresh lemon
Steps
- Sprinkle the chicken breast both side with a teaspoon salt.
Heat the vegetable oil in a big skillet over high heat and put the chicken into it. Cook for about 3-5 minutes each side or until golden brown and set aside.

- Reduce the heat and still using the same skillet, add the chopped onion and stir until the onion turns translucent.
Add minced garlic, chilis, ginger, tomato paste and stir for a couple minutes.
Add the curry powder, turmeric, ground coriander, cayenne pepper, cumin and garam masala. Stir for a minute.

- Pour the tomato purée, yogurt, water.
Season with salt, pepper and sugar.
Put the chicken breast back to the skillet and cover it with the sauce then bring to a boil.

- Reduce the heat and simmer for about 20-25 minutes or until the chicken breasts get tender.
Sprinkle with fresh chopped cilantro and lemon juice before serve.
