Turkey Cutlets with Lemon Sauce

Ingredients
500 g turkey
salt
pepper
300 ml vegetables stock
3 Tbsp lemon juice
2 tsp sugar
2 Tbsp vegetable oil
300 g green bean
200 g wild rice
Steps
- Cook the wild rice according to package instructions.
Wash and simmer the green beans for about 8 minutes or until cook through.


- Season the turkey cutlets both sides with salt and pepper.
Preheat the vegetable oil in a large pan over med-high heat.
Add the cutlets and cook until both sides turn golden brown.
Remove from the pan and wrap with aluminum foil to keep the turkey warm while preparing the sauce.

- In the same pan, pour the vegetable stock and scrape any brown bits off the bottom of the pan into the sauce.
Add sugar and lemon juice. Let it simmer for some minutes until slightly thickened.

- Coat the turkey cutlets with the sauce and serve directly with cooked wild rice and green beans.
