Peruvian Stir-Fry (Lomo Saltado)

600 g beef (thinly sliced)
1 tsp garlic
1 tsp cumin
2 Tbsp vegetable oil
1 red onion (peeled & cut into thick half moon slices)
4 tomatoes (seeded & cut in wedges)
1 Peruvian yellow chili pepper (seeded & cut in thin slices)
2 Tbsp soy sauce
2 Tbsp white vinegar
a pinch of salt salt
a pinch of black pepper
2 Tbsp chopped cilantro
300 g fried potatoes
2 cups cooked white rice (side dish)
Steps
- Bake or fry the French Fries according to package instructions.
Pat dry the beef, then slice them thinly and cut into strips. Season with salt, pepper, garlic powder and cumin; set aside.


- Meanwhile, peel and cut the red onion into half-moon slices.
Cut and seed the tomatoes and Peruvian yellow chili pepper (aji amarillo).


- Preheat the vegetable oil in a large pan over medium-high heat.
Add the beef and cook until the beef is fully cooked through for a few minutes.
Add the red onion, stir and saute for 2 minutes.

- Add the Peruvian yellow chili pepper, mix well.
Pour the soy sauce and vinegar. Let it simmer for about 2 minutes. Season with salt and pepper.
Add tomatoes and cook for another 3 minutes.

- Just before serving, sprinkle with chopped fresh cilantro and add the French fries to the stir-fry. Serve with rice.
