One-Pan Cilantro Lime Chicken Rice

500 g chicken
1 tsp granulated garlic
1 tsp cumin
1 tsp cayenne pepper
1 small chopped onion
2 cloves minced garlic
100 g tomatoes
250 ml chicken stock
350 g cooked white rice
1/2 tsp lime zest
1 tsp lime juice
1/4 cup fresh chopped cilantro
1/2 tsp sugar
salt
pepper
3 Tbsp vegetable oil
Steps
- Dice the chicken breasts into 1-inch cubes and toss to evenly coat with granulated garlic, cumin, cayenne pepper, salt and pepper.

- In a large pan, heat the vegetable oil over medium heat.
Add the chicken and cook for about 7 minutes until golden and cooked through.

- Add the chopped onion and minced garlic.
Stir until the onion become translucent for about 5 minutes.

- Dice the tomatoes and put into the pan. Pour the chicken stock and let the liquid reduce by half.
Season with salt, pepper and sugar.

- Add the cooked white rice. Stir to combine and make sure the rice is heated through.

- Add the lime zest and cilantro.
Drizzle with lime juice before serving.
