One-Pan Cilantro Lime Chicken Rice

Ingredients

  • 500 g chicken

  • 1 tsp granulated garlic

  • 1 tsp cumin

  • 1 tsp cayenne pepper

  • 1 small chopped onion

  • 2 cloves minced garlic

  • 100 g tomatoes

  • 250 ml chicken stock

  • 350 g cooked white rice

  • 1/2 tsp lime zest

  • 1 tsp lime juice

  • 1/4 cup fresh chopped cilantro

  • 1/2 tsp sugar

  • salt

  • pepper

  • 3 Tbsp vegetable oil

Steps

  • Dice the chicken breasts into 1-inch cubes and toss to evenly coat with granulated garlic, cumin, cayenne pepper, salt and pepper.
  • In a large pan, heat the vegetable oil over medium heat. Add the chicken and cook for about 7 minutes until golden and cooked through.
  • Add the chopped onion and minced garlic. Stir until the onion become translucent for about 5 minutes.
  • Dice the tomatoes and put into the pan. Pour the chicken stock and let the liquid reduce by half. Season with salt, pepper and sugar.
  • Add the cooked white rice. Stir to combine and make sure the rice is heated through.
  • Add the lime zest and cilantro. Drizzle with lime juice before serving.
