Indonesian sweet pumpkin soup – Pumpkin kolak

Ingredients

  • 500 g pumpkin

  • 100 g palm sugar

  • 100 ml coconut milk

  • 500 ml water

  • 2 pandanus leaf

  • a pinch of salt

Steps

  • Peel the pumpkin and cut into pieces, set aside. Boil the water, palm sugar, knotted pandanus leaves and pinch of salt in a large pot.
  • Add the pumpkin and cook over medium heat for about 10-15 minutes or until the pumpkin are tender. Turn low the heat. Pour coconut milk and stir frequently for another 10 minutes.

  • Serve immediately or at room temperature.
