Chicken Rica – Rica

minutesThis rica – rica is an authentic traditional Indonesian food. In one bite you will feel the intense of spicy flavour.
Ingredients
500 g chicken
1/4 tsp ground coriander
1/2 tsp pepper
1 tsp salt
1 tsp sugar
2 Tbsp sweet soy sauce
250 ml chicken stock
100 ml water
2 lime leaf
1 bay leaf
1 lemongrass
1 tsp galangal
3 Tbsp vegetable oil
100 ml water
3 garlic (15 g)
5 shallot (40 g)
5 chilis (optional)
5 candlenut
1/2 fresh ginger
1/4 fresh turmeric
2 cloves shallot
1 Tbsp fried shallot
cooked white rice
Steps
- Cut the chicken breast into cube and set aside. You can use any part of the chicken, in this recipe i use chicken breast.
- Crush the spice paste ingredients (garlic, shallot, chilis, candlenut, fresh ginger, fresh turmeric) with mortar and pestle or food processor until smooth then set aside.
In a wok or large skillet, heat the vegetable oil over medium heat.
Add the spices paste, together with ground coriander and pepper. Let it cook for about 4 minutes.



- Put the chicken to the wok and stir it for about 3 minutes. Pour the chicken stock and sweet soy sauce, mix it well. Add the salt, sugar, lemongrass, lime leaves, galangal, bay leaf. Partially cover and simmer for about 30 minutes, check on it periodically.
- Meanwhile, slice the shallots thinly. Fry the shallots with some oil until turns golden brown and set aside.
- After 30 minutes, pour the water to the wok and simmer another 15 minutes or until the sauce thickened.
Take the bay leaf, lime leaves, lemongrass and the galangal out from the wok.
Serve chicken rica-rica with rice and sprinkle with fried shallot.
