Rösti with smoked Salmon

Ingredients

  • 600 g potatoes

  • 2 scallion (root ends trim)

  • 1 tsp salt

  • 1/4 tsp pepper

  • 1/2 tsp smoked paprika

  • 2 Tbsp flour

  • 1/2 tsp baking powder

  • 2 egg

  • 2 Tbsp vegetable oil

  • 200 g creme fraiche

  • 125 g smoked salmon

  • 1 Tbsp chopped chives

Steps

  • Peel and coarsely grate the potatoes. Wash them with cold water and drain. Squeeze out all the water and pat dry with paper towel. Chop the scallions.
  • potato mixture: In a large bowl, mix well the grated potatoes, salt, pepper, smoked paprika, chopped scallions, flour, baking powder, eggs.
  • Heat the vegetable oil in a large pan on medium-high heat. Once the oil nicely hot, add heaped tablespoonfuls of the potato mixture and flatten slightly using a slotted spatula. Fry the Rösti until golden and crisp on both sides. It takes around 3-4 minutes each side. Drain on paper towel. Repeat with the remaining potato mixture and allow to cool slightly.
  • Spread a dollop creme fraiche or sour cream on each Rösti. Top with smoked salmon sprinkle with chopped chives.
