Chicken Pasta with Cream & Cranberry Sauce

Ingredients

  • 500 g chicken (chicken breast)

  • 3/4 tsp salt

  • 1/2 tsp pepper

  • 2 Tbsp vegetable oil

  • 1 chopped onion

  • 2 cloves sliced garlic

  • 150 ml vegetables stock

  • 1 sliced scallion

  • 2 cups cooked egg noodles

  • 150 ml heavy cream

  • 2 Tbsp cranberry sauce

Steps

  • Cook the egg noodles or any pasta you like according to package instructions. Pat dry the chicken breast and slice them thinly into strips. Season with salt and pepper.
  • Preheat the vegetable oil in a large pan over medium-high heat. Add the chicken and stir until fully cooked through for 3-5 minutes.
  • Add chopped onion and sliced garlic. Stir and sauté until the onion turns translucent. Pour the vegetable stock into the pan.
  • Add the sliced scallion and cooked egg noodles.
  • Whip the heavy cream until it has doubled in volume and forms a stiff peak. Serve the chicken pasta with whipped cream and top with a tablespoon cranberry sauce.
