Creamy Mozzarella Chicken

600 g chicken (4 chicken breasts)
salt
pepper
3 Tbsp vegetable oil
250 g cherry tomatoes
200 ml heavy cream
250 g mozzarella
a handful of chopped basil
2 Tbsp butter
1/2 tsp garlic (powder)
1 tsp smoked paprika
Steps
- Season the chicken with salt and pepper on both sides. Heat a large nonstick skillet over medium high heat with the vegetable oil. Add the chicken to the skillet and cook for about 3-5 minutes per side or until the golden brown.
- Remove the chicken to the baking dish. Cut the cherry tomatoes in half, then add to the baking dish. Preheat the oven to 190°C
- In a sauce pan, add the heavy cream, mozzarella, butter, smoked paprika, garlic powder, and chopped basil.
Heat the sauce pan on medium heat. Allow the cheese and butter to melt.
Season the sauce with a pinch of salt and pepper, if desired.

- Pour the sauce over the chicken. Top the chicken with another mozzarella cheese.
Bake the chicken in the preheated oven for 25-30 minutes.


- Serve immediately with pasta or any side dish you like.
