Ingredients
250 g flour
50 g cornstarch
1 tsp baking powder
1/2 tsp baking soda
75 g sugar
salt
2 egg (at room temperature)
1/2 tsp vanilla extract
100 g melted butter (at room temperature)
500 ml buttermilk (at room temperature)
Steps
- Preheat oven to 100°C. Set a rack on a baking sheet and place in oven.
In a large bowl, whisk together flour, cornstarch, sugar, baking powder, baking soda, and salt; set aside.


- Add the eggs, melted butter, vanilla extract, and pour a little bit of buttermilk. Whisk and continue with the rest of buttermilk.
Mix just until batter is well-combined and smooth.
Let the batter rest for 10 minutes.


- Pour the batter onto the waffle maker, leaving 1 cm border on all sides or spread batter if necessary.
Close the lid. Cook the waffles until golden brown and crisp, for about 3-5 minutes.


- Transfer the cooked waffles to the wire rack and keep warm in the preheated oven as you cook the remaining batter. Serve the waffles immediately with maple syrup, or with any toppings you desire!
