Ingredients

  • 5 big potatoes

  • 3 Tbsp butter

  • 1 chopped onion

  • salt

  • ground black pepper

  • 1/2 tsp chopped fresh rosemary

  • 1 tsp paprika

  • 1/2 tsp dried oregano

  • 1/2 tsp dried basil

Steps

  • Dice the potatoes into bite-size pieces. Boil the potatoes in a large pot with water and a teaspoon of salt until the potatoes are tender.

  • Drain the potatoes into a strainer. Put the potatoes under the run cold water or dunk them in an ice water bath to cool them down more quickly.
  • Melt the butter in a large non-stick pan or skillet. Add the chopped onion and sauté for 3 minutes.
  • Add the cooked potatoes. Season with salt, black pepper, paprika, rosemary, oregano and basil.
  • Cook the potatoes without stirring or turning until the potatoes are golden brown on one side; turn them over and brown the other side.
