5 big potatoes
3 Tbsp butter
1 chopped onion
salt
ground black pepper
1/2 tsp chopped fresh rosemary
1 tsp paprika
1/2 tsp dried oregano
1/2 tsp dried basil
Steps
- Dice the potatoes into bite-size pieces.
Boil the potatoes in a large pot with water and a teaspoon of salt until the potatoes are tender.


- Drain the potatoes into a strainer. Put the potatoes under the run cold water or dunk them in an ice water bath to cool them down more quickly.
- Melt the butter in a large non-stick pan or skillet. Add the chopped onion and sauté for 3 minutes.
- Add the cooked potatoes. Season with salt, black pepper, paprika, rosemary, oregano and basil.
- Cook the potatoes without stirring or turning until the potatoes are golden brown on one side; turn them over and brown the other side.
