Turkey Cutlets with Lemon Sauce

is a healthy dish that will be ready on your table in 35 minutes. The sauce has incredible flavor from deglazed the pan with the vegetable stock and fresh lemon juice. What an intensely delightful sauce that will make this dish over the top of your lists. I love to serve this dish with some wild rice and green beans, but you can also enjoy with any side dish you like.

Note:

  • Add 1 Tbsp of baking powder when you simmer the beans to keep the fresh green color.

Cook the wild rice according to package instructions.
Wash and simmer the green beans for about 8 minutes or until cook through.

Season the turkey cutlets both sides with salt and pepper.
Preheat the vegetable oil in a large pan over med-high heat.
Add the cutlets and cook until both sides turn golden brown.
Remove from the pan and wrap with aluminum foil to keep the turkey warm while preparing the sauce.

In the same pan, pour the vegetable stock and scrape any brown bits off the bottom of the pan into the sauce.
Add sugar and lemon juice. Let it simmer for some minutes until slightly thickened.

Coat the turkey cutlets with the sauce and serve directly with cooked wild rice and green beans.
