Directions
Rösti
is a Swiss dish which popular in another country as hash brown. Many Swiss people consider Rösti to be a national dish. It was originally a breakfast dish, but is now served more commonly to accompany other dishes. These mini version Rösti topped with smoked salmon and a dollop of fresh cream is something indulgent you can make for special brunch when you want to treat your family or friends.
In this recipe I use cream fraiche, but of course it goes also perfectly with sour cream. You can also make Rösti the day before and keep in the fridge, then the next day you just pop them in a really hot oven to reheat and get more crisp.

Heat the vegetable oil in a large pan on medium-high heat. Fry the Rösti until golden and crisp on both sides. It takes around 3-4 minutes each side. Drain on paper towel. |
