500 g ground pork
1 chopped onion
2 Tbsp tomato paste
350 g zucchini
400 g tomatoes
200 g creme fraiche
1 tsp chilis
1 tsp smoked paprika
salt
ground black pepper
1 tsp sugar
2 Tbsp olive oil
300 g macaroni

A great recipe for summer and autumn seasons. Zucchini, tomatoes and the ground meat create very delicious combination.

Pasta with ground meat, zucchini & tomatoes

is one of my favorite easy weeknight meals beside Spaghetti bolognese. I got this recipe from my mother in law last summer. She showed me a delicious way to eat up all the zucchini and tomatoes that’s overflowing from her garden. I just love this meal and make it very often. The sauce is so creamy and flavorful. It’s very simple to make and loaded with fresh veggies so you really can’t go wrong with this meal.

Note: You can use any type of ground meat and pasta.

Dice the zucchini and tomatoes, set aside.

In a large pan preheat over medium high, cook the ground pork with olive oil until cooked through.
Add the chopped onion and let it cook for 5 minutes.

Add the tomato paste and stir well.
Add diced zucchini and tomatoes. Sauté for an additional 3 minutes.

Add the creme fraiche, dried chilis, smoked paprika and sugar.
Simmer and stirring occasionally, until the sauce is slightly thickened, about 15 - 20 minutes.
Season with salt and black pepper.

Meanwhile cook macaroni in a large saucepan of boiling salted water, according to package instructions or until macaroni is tender.
Drain the macaroni and toss with sauce.
Serve immediately.
