500 g chicken
1 tsp granulated garlic
1 tsp cumin
1 tsp cayenne pepper
1 small chopped onion
2 cloves minced garlic
100 g tomatoes
250 ml chicken stock
350 g cooked white rice
1/2 tsp lime zest
1 tsp lime juice
1/4 cup fresh chopped cilantro
1/2 tsp sugar
salt
pepper
3 Tbsp vegetable oil

One-Pan Cilantro Lime Chicken Rice

is a simple one comfort meal and very easy to make. Only by cooking the chicken, stir with the chicken stock and rice, then finishing with lime zest, fresh cilantro and drizzle of lime juice. Less cleanup afterward and can be served in about 30 minutes. This tasty and super quick meal will help you fit dinner into the family’s hectic schedule tonight.

Dice the chicken breasts into 1-inch cubes and toss to evenly coat with granulated garlic, cumin, cayenne pepper, salt and pepper.

In a large pan, heat the vegetable oil over medium heat.
Add the chicken and cook for about 7 minutes until golden and cooked through.

Add the chopped onion and minced garlic.
Stir until the onion become translucent for about 5 minutes.

Dice the tomatoes and put into the pan. Pour the chicken stock and let the liquid reduce by half.
Season with salt, pepper and sugar.

Add the cooked white rice. Stir to combine and make sure the rice is heated through.

Add the lime zest and cilantro.
Drizzle with lime juice before serving.
