Soda Bread

has been an Irish household staple long time before the potato became a national favorite. The essential ingredients in a traditional Irish soda bread are flour, baking soda, salt and buttermilk. The acid in buttermilk reacts with the base of the baking soda to provide the bread’s leavening. So it doesn’t require yeast and no resting so it is incredibly fast to whip up. In this recipe, I add an egg to make the dough a lot richer. Another advantage of this bread is no time-consuming,  very easy to make, without requiring skilled labor and temperature control like another yeast bread. Enjoy this real soda bread simply with Irish butter and jam, but no matter how you serve with, it will never go wrong!

Note :

If you don’t have buttermilk in hand, you can use 150 ml of fresh milk with 1 tablespoons of Lemon juice or white vinegar. Mix and let it stand for a minimum of 30 minutes before using.

Preheat the oven to 200°C. Line a baking sheet with parchment paper.

Combine together the flours, baking soda, salt, sugar in a large bowl.
Add the cold butter and mix with fork or rub with your fingertips until the butter is well-mixed into the flour mixture.

In a cup, lightly beat the buttermilk and egg.
Make a well in the center of the flour mixture and slowly pour the buttermilk mixture in.
Combine all together and bring to a loose dough using an open hand. The dough should be soft and not too sticky.

Dump the dough onto a well-floured parchment paper, and gently bring the dough into a round about 3,5cm thick.
Glaze the dough with the leftover bit of buttermilk from your cup.

Make a deep cross on top of the dough with a knife.
Sprinkle the top with some rolled oats.

Bake for 45-55 minutes. When done, the bread will have a hollow sound if you tapped on the bottom.
Let it cool on a wire rack.
