a handful of chopped basil
2 Tbsp butter
1/2 tsp garlic powder

is a simple weeknight dinner recipe! The chicken breasts are rubbed with simple seasonings and pan fried until golden brown. Top them with mozzarella then bake in the oven for 30 minutes with fresh cherry tomatoes and homemade cheese sauce. Your dinner will be on the table in 45 minutes. I love to serve this creamy chicken with fried potatoes or fries, sometimes my husband loves to enjoy this chicken with pasta or even rice. I’m quite sure, when you enjoy this recipe and then somebody tries to talk to you, you will just keep chewing and deep into that bite. Season the chicken with salt and pepper on both sides.
Heat a large nonstick skillet over medium high heat with the vegetable oil.
Add the chicken to the skillet and cook for about 3-5 minutes per side or until the golden brown.

Remove the chicken to the baking dish.
Cut the cherry tomatoes in half, then add to the baking dish.
Preheat the oven to 190°C

In a sauce pan, add the heavy cream, mozzarella, butter, smoked paprika, garlic powder, and chopped basil.
Heat the sauce pan on medium heat. Allow the cheese and butter to melt.
Season the sauce with a pinch of salt and pepper, if desired.

Pour the sauce over the chicken. Top the chicken with another mozzarella cheese.
Bake the chicken in the preheated oven for 25-30 minutes.

Serve immediately with pasta or any side dish you like.
