Couscous with Arugula Salad and Orange
is the quickest and really healthy meal that I can think of, without worrying about the presentation. Well, this meal is very good looking because you will get many colors from the red onion, arugula/rocket leaves, fillet orange and almonds. If you search an easy and perfectly balanced meal, this couscous recipe is a great healthy eating option.
Note:
I cook the couscous with some vegetables stock, but feel free to cook it with any other stock you have, or just with mineral water.
