Ingredients

500 g chicken
1/4 tsp ground coriander
1/2 tsp pepper
1 tsp salt
1 tsp sugar
2 Tbsp sweet soy sauce
250 ml chicken stock
100 ml water
2 lime leaf
1 bay leaf
1 lemongrass
1 tsp galangal
3 Tbsp vegetable oil
spice paste
3 garlic 15 g
5 shallot 40 g
5 chilis optional
5 candlenut
1/2 fresh ginger
1/4 fresh turmeric
serve with
1 Tbsp fried shallot
cooked white rice

Chicken Rica-Rica

is a popular spicy food from Indonesia. Rica-rica or sometimes simply called rica is originally from Manado (a city in Sulawesi Island). My closest friend taught me this recipe when i was still in Indonesia. This delicious dish uses chicken cooked with some authentic herbs. Tender and spicy that comes together to the chicken in a wok with loads of flavor. If you are not into spicy, you can just take the chilis out from the recipe and i’m sure you can still definitely enjoy this dish. Combine this delicious chicken with plain or yellow rice.

Cut the chicken breast into cube and set aside.
You can use any part of the chicken, in this recipe i use chicken breast.

Crush the spice paste ingredients (garlic, shallot, chilis, candlenut, fresh ginger, fresh turmeric) with mortar and pestle or food processor until smooth then set aside.
In a wok or large skillet, heat the vegetable oil over medium heat.
Add the spices paste, together with ground coriander and pepper. Let it cook for about 4 minutes.

Put the chicken to the wok and stir it for about 3 minutes.
Pour the chicken stock and sweet soy sauce, mix it well.
Add the salt, sugar, lemongrass, lime leaves, galangal, bay leaf.
Partially cover and simmer for about 30 minutes, check on it periodically.

Meanwhile, slice the shallots thinly.
Fry the shallots with some oil until turns golden brown and set aside.

After 30 minutes, pour the water to the wok and simmer another 15 minutes or until the sauce thickened.
Take the bay leaf, lime leaves, lemongrass and the galangal out from the wok.
Serve chicken rica-rica with rice and sprinkle with fried shallot.
