Advocaat Cake
or in German we call it Eierlikörkuchen is a light sponge flavored cake with a generous slug of Advocaat/egg liqueur (similar to eggnog). It tastes custardy and got a very subtle hint of alcohol. A fine and tender, this golden cake is simplicity at its best. Baked in a Bundt pan for a touch of elegance, it’s equally good served with Advocaat glaze on top.
note:
- Store leftover cake, well wrapped, at room temperature for several days.
- Always keep an eye while you are baking this cake. Check at the first 30 minutes, if the cake appears to be browning too quickly, tent it with foil for the final 30 minutes of baking.
- You can just dust the cake with powdered sugar instead making the glaze.

Preheat the oven to 175°C. In a large mixing bowl, add the eggs, sugar, vanilla, a pinch of salt. Beat together at medium-high speed until the mixture lightens in color and looks fluffy. Scrape the sides and bottom of the bowl. |

Bake the cake for 50 to 60 minutes, until it's starting to brown, appears set on top and a toothpick inserted into the center comes out clean. (Start checking at 30 minutes, if the cake appears to be browning too quickly, tent it with foil for the final 30 minutes of baking.) Remove the cake from the oven, and gently loosen its edges using a heatproof spatula. Turn the pan over onto a cooling rack. After 10 minutes, lift the pan off the cake, and allow it to cool completely. |

I made this cake yesterday for my fiance’s birthday with some egg liquor we’d brought back from Germany. I was nervous to make a cake so different from what I normally would, but it was hands down the most delicious cake I’ve ever had! Thank you for such a wonderful recipe!
